Crab Soup Dumplings Along the Lower Yangtze

Crab roe soup dumplings and crab xiaolong in Longpao, Jingjiang, Wuxi, Suzhou and Shanghai: what distinguishes each style, how to eat them, and where to start.

A crab roe soup dumpling arrives looking like any other steamed bun. The work behind it is not: picking river crab is slow, and a thin pleated wrapper that holds soup is slower still. Open the skin and hot broth, crab roe and pork spill out. Cooks and eaters across the Lower Yangtze have argued for years about where that balance is best.

A crab roe tangbao, the style associated with Longpao and Jingjiang, is larger and built around liquid. A crab xiaolong, found in Wuxi, Suzhou and Shanghai, is smaller and usually carries more pork. One is a broth dish, the other a meaty bite. Neither is the correct version.

Nanjing's Longpao: A Town Named for a Sandbar

Longpao is a township in Luhe District, Nanjing. The name comes from a Yangtze sandbar said to resemble an imperial dragon robe, and the place name appears in records as far back as the Tianqi reign of the Ming dynasty. Local cooks tie the dumpling to the Qianlong emperor, who is said to have tasted and praised it. The story is unreliable; the town's attachment is not. Longpao holds an annual crab soup dumpling festival, and restaurants there have formed associations and cooperatives around the trade.

The established names include Liu Ba Nongzhuang, Longpao Changjiang Hotel and Lao Hongyuan. Liu Ba Nongzhuang is known for its filling: ordinary river crab, with roe and meat blended generously into pork so neither dominates, though the skin can be fragile and prone to tearing. Lao Hongyuan's wrappers are thinner, more resilient and nearly translucent; its broth runs saltier and the pork proportion is high. Longpao Changjiang Hotel sits between them, with a clean broth and a pork-heavy filling. Most shops sell by the basket, some by the piece; ask before ordering.

Folds are a local point of pride, said to number 33 in line with the steps of preparation. Counting them is a poor substitute for tasting. Longpao dumplings are larger than ordinary xiaolong; the best make crab and pork taste like a single savoury idea rather than two fillings sharing a wrapper.

Jingjiang: The Broth Comes First

Jingjiang, in Taizhou, made its name in part through television exposure. Service is part of the dish: a server lifts each dumpling onto a small plate because the skin is too fragile for most diners to move it. There is no straw. Bite a small opening at the side and sip.

The broth begins as old hen stock reduced to aspic, then mixed with crab roe, crab meat and pork. Steaming turns the aspic back into liquid. Once the broth is gone, the skin can be opened to reveal crab settled at the bottom. Nan Yuan Hotel and Hongyun are familiar names, but quality varies: a lukewarm serving has been noted at Nan Yuan, a modest filling at Hongyun. A local favourite is the Old Education Bureau Guesthouse, nicknamed Yaotou tangbao, or shaking-head soup dumpling. Its crab meat is the draw, with thin skin, hot broth and crab the kitchen insists on picking the same day. Takeaway and online orders exist, but texture and aroma suffer. Eat on site.

Wuxi and Suzhou: The Xiaolong Detour

Those who find tangbao too liquid-centred may prefer the crab xiaolong. Wuxi's is larger than Shanghai's, with a full pork filling and a pronounced sweet note. Good versions keep that sweetness in check so it supports the meat and crab rather than coating the mouth. Xishengyuan is a reliable local name, with a balance of pork, crab and sweet-savoury broth. Wang Xingji can be too sweet for some palates; Yiqinyuan draws television-driven crowds but can be pork-heavy.

Suzhou is a hairy crab city first. Many locals prefer whole crab to crab xiaolong, and the dumpling is less central to the city's food culture. The most visible crab xiaolong comes from Xishengyuan, whose Shiquan Street branch is busy and can sell out around midday. The Suzhou filling is lighter on crab than Wuxi's, perhaps adjusted to local taste. Chen Yang Crab Soup Dumpling has been disappointing, with little crab and greasy notes. Deyuelou's version is crab-oil pork rather than a true crab roe xiaolong. For a focused tasting, Xishengyuan is the safer stop.

Shanghai: Smaller, Clearer, More Crab

Shanghai's xiaolong tend to be smaller and less sweet than Wuxi's, with a clear savoury broth that suits crab. Jia Jia, Lai Lai, Fu Chun and Wan Shou Zhai all have followings for xiaolong generally. For crab, Wuyouxian in Minhang's Zhaojialou area is a specialist. The ground floor has an open kitchen where crab is picked and dumplings are folded; the menu separates pure crab roe, pure crab paste, pure crab meat and mixed pork fillings. A mixed trio lets a table compare.

The wrapper is very thin. The house method is to set the dumpling on a spoon and pour ginger vinegar into the top opening, once to season and again to cool it slightly. Without pork, the crab flavour is more direct, though some diners find it strong or fishy. A small glass of lemon juice finishes the meal. Pure crab dumplings are not recommended for takeaway; mixed ones may be sold raw for steaming at home. In Qibao, Bainian Longpao Crab Soup Dumpling carries the Longpao name but belongs to the crab xiaolong family. It is a useful stop in a tourist area, with full filling and fresh broth.

Practical Notes for a Crab Dumpling Crawl

Plan for autumn if you can, when crab is at its best, though availability varies by restaurant and season. Ask whether dumplings are sold by the basket or the piece. Eat them promptly: the broth cools quickly and the wrapper softens. Do not rush the first bite, especially with a full tangbao. Small shops change, so confirm opening hours, menus and restaurant status with an official source before travelling.

Beyond these five cities, other regional names carry local reputations: Zhenjiang Yanchun, Huai'an Wenlou and Taixing Quxia. The crab soup dumpling is not one dish but a family of local interpretations, each with its own balance of crab, pork, broth and wrapper.
